Ingredients:
1 14.75 oz. can pink salmon, drained
1 egg, beaten
1/2 cup bread crumbs
1/4 cup chopped green onions
1 tsp. salt
1 tsp. pepper
2 tsp. yellow mustard
2 Tbsp. olive oil
4 slices sharp cheddar cheese
4 whole wheat hamburger buns
Homemade Guacamole (Recipe Below)
Homemade Guacamole
4 avocadoes
1 roma tomato, chopped
1/2 small onion, chopped
Juice of 1 lime
2 tsp. salt
Using a very sharp knife, slice each avocado lengthwise to open, remove pit, and scoop meat into medium mixing bowl. Add chopped tomato, onion, lime juice and salt. Blend until smooth.
Make Dinner:
Place salmon in a medium mixing bowl. Remove skin and bones from salmon as desired. Add egg, bread crumbs, green onions, salt, pepper, and mustard. Mix well to combine. Form salmon mixture into 4 equal patties.
Heat olive oil in a large skillet over medium high heat. Fry patties in skillet 2-3 minutes per side until golden brown. Top each patty with a slice of cheddar cheese. Cover skillet and reduce heat to low, allowing cheese to melt, about 3 minutes. Place each patty on a whole wheat bun. Top with 2 Tbsp. guacamole. Serve Salmon Burgers with tortilla chips and a fresh green salad.
