Ingredients:
2 pounds boneless, skinless chicken thighs
2 Tbsp. lemon juice
1 tsp. sea salt
1 tsp. cumin
1 tsp. paprika
1/2 tsp. black pepper
2 Tbsp. olive oil
1 large red pepper, seeded and chopped
1 medium onion, peeled and chopped
1 large zucchini, sliced
1/2 tsp. salt
1/4 tsp. pepper
Make Dinner:
Preheat BBQ grill to medium high. Squeeze lemon juice over chicken. In a small mixing bowl, blend sea salt, cumin, paprika and black pepper. Season chicken with spice mixture. Grill chicken for 6-8 minutes per side until cooked through.
While chicken is cooking, heat olive oil in a large cast iron skillet over medium high heat. Add chopped peppers and onions. Saute for 5 minutes until onions begin to sweat. Add sliced zucchini and season with salt and pepper. Saute vegetables for another 5 minutes until zucchini is golden brown. Remove chicken from grill. Top with sauteed vegetables.
